FLAPJACKS
cookbook : Step-by-step Baking
Ingredients :
225 gm butter plus extra for greasing
225 gm soft brown sugar
2 tbsp golden syrup
350 gm rolled oats
Method :
1. Preheat the oven to 150'C. Lightly grease the base and sides of the baking tin (9 inch square tin).
2. Put the butter, sugar and syrup in a large saucepan and place over medium-low heat.
3. Stir constantly with a wooden spoon to prevent scorching (hangus). Remove from the heat.
4. Stir in the oats, making sure they are well coated, but do not over-work the mix.
5. Spoon the oat mixture from the saucepan into the prepared tin.
6. Press down firmly with the wooden spoon to make a roughly even layer.
7. To neaten the surface, dip a tablespoon in hot water and use the back to smooth the top.
8. Bake for 40 minutes or until evenly golden; you may need to turn the tin in the oven.
9. Leave to cool for 10 minutes, then cut into 16 squares, or 20 rectangles, with a sharp knife. Serve..
