FRESH APPLE CAKE
FRESH APPLE CAKE

Ingredients :
2 cups all-purpose flour
2 tsp baking soda
1 tbsp cinnamon powder
4 cups chopped apples (no need to peel), about 2 big apples as shown above
1 3/4 cups white sugar
1/2 cup vegetable oil
2 eggs, well beaten (I use gred A eggs)
2 tbsp vanilla extract
3/4 cup chopped roasted walnuts
Method :
1. Preheat oven to 350'F. Grease and flour a bundt pan or angle food cake pan. Set aside.
2. Stir flour, baking soda and cinnamon powder together in a medium bowl and set aside.
3. In a large bowl, combine chopped apples, sugar, oil, eggs, vanilla extract and nuts. Stir until well combined. Add in flour mixture and stir until fully incorporated.
4. Pour (or scoop-the batter is a bit thick) into prepared pan.
5. Bake 50-60 minutes or until done. (I bake for 40-45 minutes as I use a black bundt pan). Cool the cake before removing from pan. Dust with powdered sugar just before serving.
