CHOCOLATE PUDDING...
CREAMY CHOCOLATE PUDDING

Ingredients :
2 cups whole milk (500 ml)
3 tbsp heavy cream (I use UHT Whipping Cream) (40 ml)
50 gm dark chocolate, finely chopped (1.8 oz)
1 tbsp rice flour (10 gm)
2 tbsp cocoa powder (15 gm)
2 tbsp corn starch (20 gm)
1/4 tsp salt
1/2 tsp vanilla extract
1/2 cup sugar (100 gm)
Method :
1. Combine sugar, cocoa powder, cornstarch, salt and rice flour in a medium saucepan. Gradually add milk and whisk until well combined. Place over medium heat.
2. Cook stirring constantly until pudding is bubbling and thickens. Stir in the chopped chocolate and heavy cream. After the chocolate melted, turn off the heat, add vanilla extract and whisk until well blended.
3. Pour into dessert dishes.
4. Let cool at room temperature and then refrigerate until ready to serve...
