RESIPI IKAN SELAR KUNING
MASAK SINGGANG

Bahan-Bahan :
5 ekor ikan selar kuning
2 biji bawang besar
4 ulas bawang putih
1 inci halia
1/2 inci lengkuas
2 batang serai ~ diketuk
6 biji kacang bendi (saya tambah)
Garam secukupnya
Serbuk kunyit atau 1 inci kunyit hidup
5 keping asam gelugor
Cili merah ~ dibelah dua
3 biji cili api
Air secukupnya
Cara Memasak :
1. Tumbuk semua bawang, halia dan lengkuas. Serai diketuk sikit.
2. Sediakan air dalam periuk. Masak hingga mendidih. Bila dah mendidih, masukkan bahan-bahan yang sudah ditumbuk tadi, letak sedikit serbuk kunyit,serai dan garam.
3. Tunggu sehingga air mendidih lagi kemudian masukkan asam gelugor, cili merah, cili api, kacang bendi dan ikan. Masukkan garam secukup rasa.
4. Bila ikan sudah agak masak, dan kuah dah mendidih, tutup api.

BANANA CHOCOLATE BROWNIES

Dry Ingredients :
125 gm cake flour or plain flour (1 cup)
40 gm Valrhorna cocoa powder (3/8 cup)
3/4 tsp baking soda
3/4 tsp baking powder
1/8 tsp salt
130 gm caster sugar (3/4 cup)
Wet Ingredients :
1 large egg
1 overly-ripe banana, about 250 gm without skin, mashed (1 cup)
60 ml corn oil (1/4 cup)
60 ml warm water (4 tablespoon)
120 ml fresh milk (1/2 cup)
1 tsp vanilla extract
Chocolate Ganache :
110 gm semi-sweet chocolate, chop into small pieces (3/4 cup)
85 gm dairy whipping cream (1/2 cup)
15 gm soft butter (1 tablespoon)
Instructions :
1. Sift all the dry ingredients into a large bowl and combine well with sugar.
2. Combine egg and mashed banana and remaining wet ingredients into another bowl. Stir well with a hand whisk. Then pour mixture into the dry ingredients. Fold well with a spatula till batter mixture just combined. (Do Not Over Mix).
3. Pour chocolate batter mixture into a 8-inch square baking pan (grease with butter or cooking spray and line pan). Bake in the pre-heated oven at 180'C for about 30-35 minutes or till a skewer inserted into center of the cake comes out clean.
4. Leave cake in the pan and cool down cake completely before frosting with ganache cream.
5. Ganache Cream : Place chopped chocolate pieces and butter into a bowl, set aside.
6. Bring whipping cream to a boil at medium heat, then pour over the chocolate pieces. Stir chocolate till smooth.
7. Chill the ganache cream in fridge for about 30 seconds to 1 minute to thicken a little. Remove cake from pan. Stir well ganache cream again and spread it on top of cake with spatula.
8. Cut cake into desired sizes and serve immediately or store in the fridge in an airtight container. These brownies still stayed soft even after chilled for 3 days. Enjoy !!!
KARI IKAN
KARI IKAN KEMBUNG

Bahan-Bahan :
4-5 ekor ikan kembung/lebih kurang 1 kg ~ bersihkan & potong dua (saya menggunakan ikan pari, dipotong sesuai selera)
3 sudu makan rempah kari ikan
1 sudu makan serbuk cili
1 sudu makan halba campur
1 kotak kecil santan segera
2 cawan air
1/2 cawan air asam jawa
4 biji kacang bendi
1 biji terung bulat ~ belah enam (tak letak)
2 biji tomato ~ belah empat
2 tangkai daun kari
Garam & gula secukup rasa
4 sudu makan minyak masak
Bahan Hiris :
3 cm halia muda
6 ulas bawang merah
4 ulas bawang putih
Cara Memasak :
1. Panaskan minyak masak dalam periuk, tumiskan bahan hirisan bersama halba campur.
2. Kemudian tambahkan daun kari. Bila wangi masukkan campuran rempah kari bersama serbuk cili dengan sedikit air.
3. Kacau rata hingga pecah minyak, baru masukkan air asam jawa dan air.
4. Setelah mereneh, masukkan ikan. Biarkan lebih kurang 2-3 minit hingga ikan masak.
5. Masukkan santan, diikuti terung, kacang bendi dan tomato. Kecilkan api, biarkan mereneh seketika, sesuaikan rasanya dan tutup api.
6. Kari Ikan sedia dihidangkan !!!

POPIA GORENG PISANG COKLAT

Bahan-Bahan :
10 buah pisang berangan ~ dibelah dua
2 sudu besar marjerin
80 gm coklat masakan ~ disagat
80 gm kacang tanah ~ sangai & cincang
1 biji putih telur
20 lembar kulit popia
Cara-Cara :
1. Panaskan marjerin dalam kuali leper kemudian goreng pisang sehingga keperangan. Angkat dan toskan.
2. Ambil selembar kulit popia, letakkan sekeping pisang kemudian taburkan sedikit coklat dan kacang cincang, gulung dengan kemas. Lekatkan hujung kulit popia dengan putih telur.
3. Goreng dalam minyak sederhana panas sehingga keperangan. Angkat dan toskan. Lagi sedap kalau dihidang bersama Ganache@Coklat Sos...
LIGHT CHEDDAR CHEESECAKE ...
LIGHT CHEDDAR CHEESECAKE

Ingredients :
6 slices cheddar cheese (--- 20 gm per slice)
100 gm fresh milk
100 gm unsalted butter
6 egg yolks (large)
6 egg whites (large), cold from fridge
100 gm caster sugar
100 gm cake flour
Instructions :
1. Place butter and tear up cheddar cheese slices in a bowl over a pot of simmering water, take a spatula and stir to melt, then add in milk and stir until all melted and mixed together. Set aside to cool slightly before use.
2. Lightly whisk the egg yolks in another mixing bowl. Ladle big spoonful of the cheese mixture into the egg yolks. Mix well and then add in the rest and combine well.
3. Sift in the cake flour into the egg yolk mixture and make sure no lumps.
4. Preheat the oven to 150'C with a steam-bake (I place 5 small bowls water underneath). Grease and line (bottom and sides) 8 inch/20 cm baking pan.
5. In another clean mixing bowl, beat egg whites till foamy. Gradually add in sugar and beat till stiff peaks or at least close to stiff.
6. Use a whisk, mix 1/3 of egg white mixture with cheese mixture, mix to combine and till light.
7. Gently fold in the balance egg white mixture with a spatula, mix well.
8. Pour the batter into the prepared baking pan and smooth out the surface.
9. Bake the cake in the oven for about 60 minutes at lower rack or till the tester comes out clean.
10. Let cake sit inside the oven for 5 minutes with oven door ajar. Remove from oven, immediately remove cake from cake pan, cool on wire rack.
For Marble Effect :
15 gm unsweetened cocoa powder mix with 4 tablespoon hot water
Remove 300 gm plain batter and mix with cocoa paste, mix well
Pour in cake pan alternating plain batter & cocoa batter.
LALA MASAM MANIS ...

Bahan A : (Tumis)
1/2 inci halia ~ dihiris
1 ulas bawang putih ~ dicincang
Bahan B : (Sos)
2 sudu besar sos tomato
3 sudu besar sos cili
1 sudu kecil sos tiram
1 sudu kecil gula
Bahan C :
1 kg. siput Lala ~ dibersihkan
1 cawan air ~ larutkan bersama 1 sudu kecil tepung jagung
Minyak masak secukupnya untuk menumis
1 biji telur ~ dipukul
1/2 labu bawang holland ~ dihiris
1 tangkai cili merah ~ dihiris
Garam secukup rasa
Sedikit daun ketumbar ~ hiris untuk hiasan
Cara Memasak :
1. Masukkan minyak masak secukupnya ke dalam kuali, tumis semua bahan-bahan A sehingga wangi.
2. Tuangkan bahan sos iaitu sos tomato, sos cili, sos tiram dan gula ke dalam bahan tumisan sambil dikacau sehingga sebati.
3. Seterusnya masukkan siput Lala ke dalam bahan sos sambil dikacau dan masukkan bawang holland, cili merah dan air (iaitu air yang dilarutkan bersama tepung jagung).
4. Masak sehingga mendidih dan siput Lala terbuka dan masukkan garam secukup rasa.
5. Seterusnya tuangkan telur yang dipukul tadi, biarkan sebentar dan kacau sehingga telur sebati dengan kuah. Setelah masak, taburkan dengan hirisan daun ketumbar, jika suka.
6. Hidangkan dengan nasi panas.
EGG FRIED RICE ...
THE EASIEST EGG FRIED RICE

Ingredients :
4 large eggs, divided
2 tbsp olive oil or canola, divided *
1 cup diced red onion (about 1 small onion) **
1 1/3 cups frozen mixed vegetables, thawed
3 stalks of scallions, sliced
4 cups cooked brown Jasmine rice ***
2 tbsp soy sauce (use tamari if gluten free)
1 tsp toasted sesame oil (optional)
Instructions :
1. Crack 3 eggs into a small bowl and beat them together. Beat the last egg in a separate bowl.
2. Heat a large saute pan or a wok with 1/2 tablespoon of the olive oil over medium-high heat. Once the pan is hot, add the 3 beaten eggs and scramble them for about a minute. Transfer the eggs to a dish and turn off heat. Wipe off the pan or wok with a kitchen towel.
3. Drizzle the remaining 1 1/2 tablespoons of oil in the pan or wok over medium-high heat. Add the onions and cook them for about 2 minutes, stirring constantly. Add the mixed vegetables and scallions and cook for another minute.
4. Add the cooked rice into the pan or wok and cook for a few minutes, until the rice is heated through. If you have large clumps of rice, break them apart with the back of your spatula/wooden spoon. Pour the single beaten egg over the rice and stir to coat the rice with the egg. Cook for another minute.
5. Add the soy sauce and sesame oil (if using) and stir to distribute the sauces. Add the 3 scrambled eggs and stir to mix again. Serve immediately !!!

CHURROS ...
CHURROS

Bahan-Bahan :
1 cawan air
15 gm mentega
1/4 sudu kecil garam
1 sudu besar gula kastor
1 cawan tepung gandum ~ diayak
1 sudu kecil serbuk penaik ~ diayak
1 biji telur ~ dipukul (saya guna gred A)
1/2 sudu kecil serbuk kulit kayu manis
Minyak masak untuk menggoreng
Bahan Sos Coklat :
200 gm coklat masakan ~ dicincang
100 ml krim putar
100 ml susu segar
3 sudu besar sirap kencana@golden syrup
Cara-Cara :
1. Jerang air, garam dan mentega sehingga mendidih. Masukkan bahan ayak dan kacau sebati. Biarkan suam sedikit.
2. Masukkan sedikit demi sedikit telur, pukul sehingga menjadi adunan doh yang boleh dipaip.
3. Isikan ke dalam piping bag dengan nozle bintang dan picitkan ke dalam minyak panas. Goreng sehingga keemasan.
4. Angkat, toskan dan salut dengan gula bercampur serbuk kulit kayu manis.
5. Untuk Sos Chocolate : Kacau semua bahan di atas api perlahan sehingga coklat larut.
MASAK KICAP PEDAS IKAN ...
MASAK KICAP PEDAS IKAN TENGGIRI

Bahan-Bahan :
1 ekor ikan tenggiri ~ dipotong ikut suka, cuci bersih, lumur garam kunyit & goreng
1 biji tomato ~ belah 6 (saya tambah)
1 biji bawang besar ~ hiris
1 tangkai cili merah ~ hiris
4 helai daun limau purut ~ hiris atau carik
4 tangkai cili padi
1-2 sudu besar cili kisar
Garam
Kicap manis
Air secukupnya
2 batang kulit kayu manis
Bahan Kisar :
3-4 ulas bawang merah
3 ulas bawang putih
1 inci halia
Cara Memasak :
1. Panaskan minyak masak secukupnya dan tumis kulit kayu manis dan bahan kisar sehingga garing kekuningan. Masukkan cili kisar dan kacau sehingga cili masak dan pecah minyak.
2. Masukkan air secukupnya dan kicap. Biarkan mendidih.
3. Masukkan daun limau purut dan ikan yang telah digoreng. Perlahankan api, biarkan sehingga ianya sebati.
4. Masukkan cili merah, cili padi, bawang besar, tomato dan garam secukup rasa. Sedia untuk diangkat dan dihidangkan.

ROTI GULUNG SOSEJ AYAM BERKEJU

Bahan-Bahan :
10 keping roti gardenia
10 ketul sosej ayam
10 keping keju Cheddar
2 biji telur ~ dipukul, masukkan sedikit garam & serbuk lada hitam
Minyak masak secukupnya untuk menggoreng
Cara-Cara :
1. Potong tepi roti dan gelek sehingga nipis kemudian letakkan sekeping keju bersama sosej ayam.
2. Kemudian gulung dengan kemas dan dihujung roti tersebut sapukan sedikit telur sebagai bahan pelekat. Lakukan dengan kemas. Buat sehingga siap.
3. Selepas itu celupkan roti sosej dengan telur dan goreng dengan api yang sederhana kecil sehingga keperangan. Angkat dan toskan.
4. Hidangkan bersama sos pilihan.
