MINI BANANA CHOCOLATE
CHIP MUFFINS RECIPE
adapted from : SixSisters'Stuff....
Ingredients : (makes : 48 mini muffins)
1/2 cup butter (1 stick/113 gm)
1 cup white sugar
2 eggs grade A/B
1 cup mashed bananas (3-4 bananas)
1/4 cup milk
1 tsp lemon juice
2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 cups mini chocolate chips
Method :
1. Preheat oven to 350'F.
2. In a large bowl, cream together butter and sugar.
3. Add eggs and beat.
4. Add mashed bananas, milk and lemon juice.
5. Sift together flour, baking powder, baking soda and salt and add to wet ingredients. Fold in chocolate chips.
6. Spray mini muffin tins with non-stick cooking spray and fill with batter.
7. Bake for 12-15 minutes or until golden brown on top.

CHOCOLATE BROWNIE WAFFE
CHOCOLATE BROWNIE WAFFLE

Ingredients :
65 gm unsalted butter
85 gm dark chocolate, chopped
140 gm granulated sugar
2 eggs grade A/B
1 tsp vanilla extract
150 gm plain flour
2 tbsp cocoa powder
2 tsp baking powder
1/2 tsp salt
110 ml milk
Method :
1. Put the butter and dark chocolate in the microwaveble bowl, then heat in the microwave (600 W) for 1.30 minutes.
2. Remove from the microwave and stir until completely melted then add the sugar and salt, stir until combine. Let the mixture cool for 5 minutes.
3. Add the eggs, stir until combine. Sift the flour, cocoa powder and baking powder together and then pour into the bowl, stir until combine. Pour the milk and vanilla extract into the bowl, stir to combine.
4. Preheat waffle iron according to the manufacturer's instructions. Pour some batter onto the grids and spread it to the edges with a spatula. Cook the waffles 4 to 7 minutes depending on your waffle iron.
5. Serve warm with whipped cream, maple syrup or honey. You can serve it warm or cool.

CARAMEL RUSK : SNACK TIME!!!!

CARAMEL RUSK : SNACK TIME

Ingredients :
4-5 slices sandwich bread (about 130 gm), cut into small dices/cubes
90 gm salted butter
75 gm granulated sugar
30 ml milk (hot)
Method :
1. Preheat oven to 180'C.
2. Line a baking sheet with baking paper or silpat.
3. Put/spread the bread dices/cubes on the baking sheet.
4. Bake for 15 minutes or until golden brown, remove from the oven. Reduce the temperature of the oven to 150'C.
5. Meanwhile, place a pan over low heat. Put the butter and sugar into the pan. Heat until the sugar turn to light caramel.
6. Pour the hot milk into the pan (be very careful), and put the baked bread into the pan, mix until fully covered/coated.
7. Then put the bread onto the baking sheet. Spread evenly.
8. Bake for about 25-30 minutes or until dry and light brown in color. Remove from the oven, let the rusks cool before storing in airtight container.

Bahan-Bahan :
1 keping dada ayam - dipotong ikut citarasa
1 sudu kecil kicap cair
1 biji telur
3 sudu besar tepung jagung
Lada sulah secukupnya
Sedikit garam
# Gaulkan kesemuanya dengan ayam, (saya perapkan seketika anggaran 30 minit) dan kemudian goreng. Ketepikan.
Bahan Sos :
1 biji bawang besar bawang besar holland - dimayang bulat & leraikan (tambahan)
1 sudu besar minyak
1 cawan stok ayam (saya gantikan dengan 1 kiub pati ayam - hancurkan & masukkan dalam 1 cawan air tadi untuk dijadikan stok ayam)
1/4 cawan jus lemon
2 sudu besar gula pasir
2 keping hirisan lemon - hiasan
Sedikit bijan - disangai untuk hiasan
Sedikit tepung jagung dibancuh dengan sedikit air
Cara Memasak :
1. Panaskan minyak dan tumiskan bawang holland sehingga berbau harum dan sedikit layu.
2. Kemudian masukkan kesemua bahan sos kecuali bancuhan air tepung jagung.
3. Kacau sebati dan sesuaikan rasanya. Biarkan mendidih seketika.
4. Kemudian tambahkan air bancuhan tepung jagung. Sesuaikan kepekatannya ikut citarasa sendiri.
5. Bila kuah agak pekat, masukkan ayam yang digoreng tadi dan gaul rata. Biarkan sebentar.
6. Angkat dan taburkan bijan sangai ataupun hirisan daun bawang. Hiaskan dengan hirisan lemon.
7. Sedia dihidangkan dengan nasi panas...

Bahan-Bahan :
1 cawan gula pasir atau gula kastor
1 cawan air panas
125 gm mentega - cairkan
3 biji telur gred A/B
1/2 cawan susu pekat manis
1/2 sudu teh esen vanilla
1 sudu makan soda bikarbonat
1 cawan tepung gandum - di ayak
Cara Membuat :
1. Mula-mula cairkan gula di dalam kuali sehingga bertukar warna keperangan. Kemudian masukkan 1 cawan air panas, biarkan mendidih 2-3 minit baru dikacau. Ketepikan biar sejuk.
2. Dalam bekas lain, pukul telur menggunakan whisk tangan sehingga sebati sekadar pecah kuning telur perlahan-lahan, pastikan tidak berbuih kemudian masukkan 1/2 cawan susu pekat manis, kacau sebati. Masukkan sedikit esen vanilla (1/2 sudu teh), kacau rata dan sebati.
3. Kemudian masukkan mentega yang dicairkan tadi, kacau sebati.
4. OK ini bab penting!! Masukkan 1 sudu makan soda bikarbonat di dalam penapis dan tapiskan ke dalam adunan tadi, kacau rata.
5. Diikuti dengan 1 cawan tepung (diayak) ke dalam adunan sedikit demi sedikit sambil dikacau. Tidak apa jika ada ketul-ketul tepung. (Tidak perlu menggunakan baking powder).
6. Tapiskan air gula yang dihanguskan/karamel tadi ke dalam adunan. Whisk perlahan-lahan sehingga sebati dan tiada kelihatan tepung berketul/berbintil. (Tapis jika perlu). Perapkan adunan ini selama 1 jam.
7. Sediakan loyang 6 inci/5 inci sebab adunan ini sedikit. Loyang di alas dengan kertas minyak memandangkan kek ini bila siap dibakar ianya melekat.
8. Bakar selama 20 minit api bawah pada suhu 150'C. Kemudian buka api atas bawah dan teruskan membakar selama 20-25 minit pada suhu 160'C - 170'C atau sehingga masak sempurna. (Oven hendaklah dipanaskan 15 minit awal sebelum memasukkan kek)...
