BLUEBERRY MUFFINS...










BLUEBERRY MUFFINS
adapted from :    Joy of Baking
Makes :   12 muffins



Ingredients :

1  large  egg, lightly beaten
1  cup  plain yogurt  (full fat or low fat)  (240 ml)
1/3  cup  vegetable, canola, sunflower or corn oil  (80 ml)
1  tsp  pure vanilla extract
2  cups  all-purpose flour  (260 gm)
1/2  cup  granulated white sugar  (100 gm)
1 1/4  tsp  baking powder
1/2  tsp  baking soda
1/4  tsp  salt
1 - 1 1/2  cups  fresh or frozen blueberries  (if using frozen blueberries,do not thaw before adding them to the batter)  (240 - 360 gm)


Directions :

1.  Preheat oven to 375'F/190'C.  Position rack in center of oven.  Butter or line 12 muffin tins with paper liners.

2.  In a large bowl, whisk together the lightly beaten egg, yogurt, oil and vanilla extract.

3.  In another bowl, whisk the flour with the sugar, baking powder, baking soda and salt.  Gently stir in the blueberries.  With a rubber spatula, fold the wet ingredients into the dry ingredients and stir only until the ingredients are combined and moistened.  (The batter will be thick).

4.  Evenly fill the muffin tins with the batter, using two spoons or an ice cream scoop.  Place in the oven and bake for about 15-20 minutes or until a toothpick/skewer inserted in the center of a muffin just comes out clean.  Transfer to a wire rack and let cool for about 10 minutes before removing from pan...

BROWNIES BAJET...

BROWNIES BAJET

Saiz :   6  inci



Bahan 1 :

125  gm  marjerin/mentega
125  gm  chocolate compound  (saya guna Beryl's - coin)

***  Double boilkan hingga kedua-dua bahan larut


Bahan 2 :

1  biji  telur  (saya guna gred A)
1/2  cawan  gula kastor
sedikit esen vanilla
secubit garam


***  Whiskkan bahan-bahan  2 hingga gula larut.  Dah agak gula larut sedikit masukkan bahan (1) ke dalam adunan telur.  Kacau sebati.


Bahan 3 :

1/2  cawan  tepung gandum
2  sudu besar  serbuk koko
secubit baking powder


***  Ayakkan terus ke dalam (2)...

1)  Kaupbalikkan dan tuangkan ke dalam loyang bersaiz 5 atau 6 inci, digris dan dialas dengan kertas baking.
2)  Boleh ditabur dengan kekacang pilihan  (walnut/almond/ikut suka).
3)  Bakar selama 25-30 minit sehingga masak pada suhu 170'C..

NOTA :  

1)  Adunan ini sesuai untuk loyang 5/6 inci.
2)  Kalau nak guna loyang 7/8 inci, doublekan adunan.
3)  Kalau nak guna loyang 9/10 inci, gandakan 3 adunan...

MINI COFFEE CAKE MUFFINS...










MINI COFFEE CAKE MUFFINS

Makes :  27 mini muffins...



For the muffins :

1  cup  flour
1/4  cup + 2  tbsp  sugar
1  tsp  baking powder
1/4  tsp  salt
1/4  cup  butter  ~  melted  (60 gm)
1  egg  (grade A)
1/4  cup + 2  tbsp  milk
1  tsp  vanilla extract


For the crumble topping :

2  tbsp  flour
1/3  cup  sugar
1/2  tsp  ground cinnamon
2  tbsp  butter  ~  melted


Directions :

1.  Preheat oven to 350'F/180'C.

2.  Spray a mini muffin pan with nonstick spray.

3.  For the muffins :  In a large bowl combine flour, sugar, baking powder and salt.  Add in melted butter and mix with a fork so the mixture is crumbly.  Add egg, milk and vanilla extract.  Continue mixing with a fork so everything is combined.  Pour this mixture into the mini muffin pan...it should fill up approximately 16-27 mini muffins.

4.  For the crumble topping :  In a small bowl combine flour, sugar and ground cinnamon.  Add melted butter and mix with fork so the mixture is crumbly.  Sprinkle this mixture on top of the muffins.  Keep sprinkling until it's all gone.

5.  Bake for about 14-15 minutes until done.  Let cool for 10 minutes before removing muffins from pan.

KEK BLACK MAGIC OREO CHEESE

Bahan Lapisan Kek :

2  paket  biskut Oreo@28 keping  (137 gm/paket)
200  ml  susu Dutch Lady Full Cream
1/2  sudu teh  baking powder


Bahan Lapisan Cheese :

250  gm  cream cheese
2  biji  telur  (120 gm tanpa kulit)
70  gm  gula kastor
1/4  sudu teh  esen vanilla


Cara-Cara :

Blend/kisar biskut Oreo bersama krimnya sehingga halus.
Masukkan ke dalam satu bekas dan tambahkan baking powder, kacau rata.
Tuangkan susu sedikit demi sedikit sambil dikacau sehingga sebati.
Biarkan adunan sebentar lebih kurang 10-15 minit  (adunan jangan terus dikukus, rehatkan sebentar supaya tepung biskut mengembang dalam susu...ini dapat dilihat adunan menjadi pekat sedikit selepas dibiarkan seketika berbanding sejurus selepas siap di adun).
Sediakan loyang bersaiz 6 inci persegi, alas dan oleskan dasar dan keliling dengan marjerin.
Bila kukusan sudah betul-betul mendidih, tuangkan adunan ke dalam loyang.
Tutup dengan foil dan kukus selama 30 minit atau sehingga masak dengan api sederhana.
Sementara itu sediakan adunan cheese.
Mixer/putar cream cheese sehingga gebu.
Masukkan gula dan mixer/putar lagi sehingga sebati.
Masukkan pula telur dan esen vanilla, mixer/putar lagi sehingga rata.
Asingkan 2 sudu makan dan warnakan dengan sedikit pewarna red velvet emulco.
Adunan selebihnya tambahkan dengan 1 sudu teh pewarna putih, mixer/putar sekejap sehingga rata.
Bila lapisan oreo sudah masak, tuangkan adunan cheese dan lorekkan dengan adunan berwarna tadi.
Tutup kembali dengan foil dan sambung kukus semula lebih kurang 25 minit sehingga masak dengan api sederhana.
Pastikan kek betul-betul sejuk sebelum dipotong...

APPLE MERINGUE CAKE...

APPLE MERINGUE CAKE

Cake Batter :

113  gm  butter, room temperature
3/4  cup  sugar  (150 gm)
4  egg  yolks  (I use grade A)
1/4  cup  sour cream  (60 gm)  (I use buttermilk)
Grated zest from 1 lemon
1  tsp  vanilla extract
2 1/2  tsp  baking powder  (10 gm)
1/4  tsp  salt
2  cups  flour  (250 gm)


Apple Filling :

4-5  medium  apples, peeled and sliced  (I use 4 Granny Smith apples)
Juice from half of lemon
1  tsp  ground cinnamon
4  tbsp  flour  (30 gm)


Meringue :

4  egg  whites  (Grade A)
3/4  cup  sugar  (150 gm)


Directions :

1.  Preheat oven to 350'F/180'C.  Butter 10-inch/26 cm springform pan (with a removable base).

2.  Prepare the apples.  In a large bowl combine the apple slices with lemon juice, ground cinnamon and 4 tablespoons flour.  Set aside until ready to use.

3.  Prepare the cake batter.  Combine flour, baking powder and salt into a medium bowl.

4.  In another bowl, cream together butter and sugar until well mixed.  Beat in the egg yolks, sour cream, lemon zest and vanilla extract.  Stir in flour mixture and mix until well combined.

5.  Pour the batter into the prepared pan and arrange the apple slices on top.  Bake for about 30 minutes or until a toothpick inserted in the cake comes out clean.

6.  Meanwhile, prepare the meringue.  Whip the egg whites until foamy with an electric mixer.  Gradually add the sugar, whipping the whole time until it holds very stiff peaks.

7.  Remove the pan from the oven and add whipped egg whites on top of the cake and bake for another 20 minutes until golden brown.  Run a sharp knife completely around the inside edge of the pan.  Let cool slightly at room temperature before serving...

BUBBLE RICE COOKIES...











BUBBLE RICE COOKIES

Yields :   69 pcs...



Ingredients :

130  gm  unsalted butter
60  gm  granulated sugar
1  large  egg  (70 gm)  (I use grade A)
1  tsp  vanilla extract
170  gm  plain flour
1/2  tsp  baking soda
A pinch of salt
80  gm  rice bubbles @ crispy rice
70  gm  chocolate chips


Directions :

1.  Cream butter and sugar till white and fluffy.

2.  Add egg and vanilla extract, mix well.

3.  Sift in flour, baking soda and salt and continue to mix well.

4.  Lastly pour in crispy rice and chocolate chips, fold well with a spatula.

5.  Scoop cookie mixture with a dessert spoon and drop onto a lined baking tray and bake in the preheated oven at 150'C for about 25 minutes or until golden crisp around the edges.

6.  Cool down cookies on a wire rack and then store in an airtight container...

APPLE UPSIDE DOWN CAKE...

APPLE UPSIDE DOWN CAKE

Ingredients :

4-5  apples  (I use 5 Granny Smith apples)
50  gm  butter  (1/4  cup)  +  1  tbsp
7  tbsp  granulated sugar
1  tsp  ground cinnamon


Cake Ingredients :

75  gm  (about 1/3  cup)  butter, at room temperature
5  tbsp  granulated sugar
3  eggs  (I use grade A)  ~  separate whites & yolks
3  tbsp  sour cream  (I use buttermilk)
Grated peel/zest of 1 lemon
1  tsp  vanilla extract
2  tsp  baking powder
11  tbsp  all-purpose flour


Directions :

1.  Preheat oven to 350'F/180'C.  Butter a 10-inch/26 cm round cake pan.

2.  Peel apples and sprinkle lemon juice over them.  Cut them into wedges, remove the core and slice.

3.  Melt the butter in a saucepan.  Add 5 tablespoons of sugar and cook until sugar dissolves and mixture turns golden brown.  Pour the mixture into the prepared pan and arrange the apple slices.  Sprinkle 2 tablespoons of sugar and add 1 tablespoon of butter cut into small pieces over the apples.  Cook in the oven until/while you prepare the batter for the cake.

4.  While the apples are in the oven, prepare the cake batter.  Separate the egg whites from the egg yolks.  Whisk together the flour and baking powder in a small bowl and set aside.

5.  In a large bowl, cream together butter and sugar until well mixed.  Beat in the egg yolks, sour cream, lemon zest and vanilla extract.  Stir in the flour mixture and mix well.

6.  Whip egg whites until very stiff and firm.  Fold them into the butter mixture.

7.  Remove the apples from the oven and sprinkle ground cinnamon on top.  Pour the cake batter over the apples and bake for 25 to 30 minutes until golden and a toothpick inserted in the center of the cake comes out clean.

8.  Remove the cake from the oven and let it stand for about 5 minutes.  Then run a knife around the edges of the cake to loosen it from the sides of the pan and invert the cake onto a cake plate.

9.  Can be served as it is  OR  with vanilla ice cream.

Bahan-Bahan :

5-6  batang  sosej  ~  dicelur seketika, toskan & dipotong 2
1  biji  ubi kentang  ~  dihiris bulat & digoreng hingga kekuningan
4  ulas  bawang merah *
1  ulas  bawang putih *  (* ditumbuk)
4  sudu besar  cili kisar
Sedikit kicap manis  ~  untuk warna sambal yang menarik
Beberapa hirisan bawang besar
1  biji  cili hijau  ~  dihiris
Sedikit air  (jika perlu)
Garam & gula secukupnya
Minyak masak


Cara Memasak :

1.  Tumis cili kisar sehingga naik minyak dan masak.  Masukkan bahan tumbuk, kacau.
2.  Masukkan sedikit gula dan kicap manis.  (Jika terlalu kering, masukkan sedikit air).
3.  Perasakan dengan garam secukup rasa.  Masukkan sosej, ubi kentang yang digoreng tadi, cili hijau dan juga hirisan bawang besar.  Kacau sehingga semuanya sebati. 
4.  Angkat dan hidangkan...
