PUDING TAUHU...











PUDING TAUHU

Bahan Untuk Puding :

1  paket  agar-agar serbuk@10 gm sepaket
6 1/2  cawan  air
2  sudu besar  gula pasir
1/2  cawan  santan  (saya guna santan kotak)
1/2  cawan  susu pekat manis
1/2  cawan  susu cair
1  helai  daun pandan  -  disimpul
secubit garam


Bahan Untuk Kuah :

1  tin  laici
1  tin  air  (gunakan tin laici sebagai penyukat)
4  sudu besar  gula pasir


Cara Penyediaan :

1.  Untuk membuat puding :  Masak air bersama serbuk agar-agar dan gula serta daun pandan sehingga mendidih.

2.  Masukkan santan, susu pekat, susu cair dan garam.  Masak lagi sehingga hampir mendidih (keluar wap yang banyak) dan tutupkan api.  Biarkan sehingga suam.  Tapiskan ke dalam sebuah bekas lain dan bolehlah di tuangkan ke dalam acuan yang disukai.  Biarkan sejuk dan masukkan ke dalam peti sejuk sehingga hendak dihidangkan.

3.  Untuk membuat kuah :  Asingkan buah laici ke dalam bekas berasingan dan siat-siatkan sedikit.  Masak air laici bersama 1 tin air dan gula sehingga mendidih.  Biarkan sejuk.  Masukkan ke dalam peti sejuk dan biarkan betul-betul sejuk sebelum menghidang.

4.  Cara menghidang :  Letakkan puding tauhu ke dalam sebuah mangkuk dan letakkan juga buah laici yang disiat tadi.  Tuangkan kuah dan puding tauhu sedia untuk dinikmati...


INFO :   Puding ini boleh juga kalau hendak dimakan dengan Fruit Cocktail, cuma gantikan laici dengan fruit cocktail...bahan-bahan untuk kuahnya sama dalam resipi...

CHOCOLATE SWIRL CHEESETART...





 Original recipe uses Blueberry Pie Filling but I changed to Nutella as I don't have Blueberry Pie Filling in my pantry...






CHOCOLATE SWIRL CHEESETART

Crust Pastry :  (serves 45 pcs)

80  gm  butter, at room temperature
30  gm  margarine
55  gm  icing sugar
1/8  tsp  vanilla extract
30  gm  egg  (lightly beaten and weigh 30 gm)
225  gm  plain flour
1/2  tbsp  milk powder


Cheese Filling :

250  gm  cream cheese, at room temperature
25  gm  butter, at room temperature
45  gm  fine sugar
1  egg, grade A
35  gm  evaporated milk *
20  gm  plain flour


Other Ingredients :  Nutella

Ingredients for Apricot Glaze :  (optional)

70  gm  apricot jam
3/4  tsp  hot water


Directions :

1.  Preparing the crust :  Mix together butter, margarine, icing sugar and vanilla extract, beat over medium speed until light and fluffy.
2.  Add in eggs gradually, mix until well blended.
3.  Add in flour and milk powder, mix well (add in some extra flour if the dough is too sticky).
4.  Preheat oven to 190'C/375'F.
5.  Put some dough into tart mould (7cm), cover with a piece of cling wrap, top with a smaller tart mould (6.5cm), press down to fill dough into the larger mould.
6.  Trim the extra dough off, then prick the bottom with a fork to create some holes.
7.  Bake in the preheated oven at 190'C/375'F for about 15-16 minutes, or until golden brown.


Prepare Cream Cheese Filling :

1.  Mix together cream cheese, butter and sugar, beat over low speed until smooth (Reminder :  Cream cheese must be at room temperature to ensure a smooth and creamy filling).
2.  Add in egg, mix until well blended.
3.  Add in evaporated milk and flour, mix until well combined.  (Reminder :  If the cheese filling is too thick, add in some extra evaporated milk; if it is too runny, add in some extra flour).
4.  Put the cream cheese filling into piping bag.


Making Nutella Cheese Tart :

1.  Preheat oven to 200'C/390'F.
2.  Fill the baked crust with cream cheese filling, top with nutella then swirl with wooden stick to create marble effect or any desired design.
3.  Bake in the preheated oven for 10-13 minutes.  After removing from oven, set aside to cool for 15-20 minutes on a wire rack.
4.  Preparing the apricot glaze :  Mix together apricot jam and hot water in a small bowl.  Heat up the jam by sitting the small bowl in hot water to dilute it, then strain through a sieve/strainer.
5.  Unmould the tarts, then brush the top with apricot glaze.
6.  Keep the chocolate cheese tarts refrigerated for a few hours until fully chilled before serving.


NOTE * :  You may replace evaporated milk with whipping cream if you want the cream cheese filling to have a richer taste.  (Original recipe uses 130 gm blueberry filling)...

HOMEMADE WAFFLES...










HOMEMADE WAFFLES

Ingredients :   (makes about 10 pcs)

2  cups  all-purpose flour  (250 gm)
2  tsp  baking powder  (8 gm)
1/2  tsp  salt  (3 gm)
3  tbsp  sugar  (45 gm)
1  tsp  vanilla extract  (5 gm)
2  cups  fresh milk  (480  ml)
2  eggs, separated  (I use large eggs - grade A)
3  tbsp  butter, melted  (45 gm)


Directions :

1.  In a large bowl whisk together the dry ingredients :  flour, baking powder and salt.

2.  Separate the eggs.  Mix the egg yolks with sugar, melted butter and milk and add to the dry ingredients and mix until well combined.

3.  Whip the egg whites until soft peaks and gently fold them into the yolks mixture until well combined.

4.  Preheat your waffle iron and spray both surfaces with cooking spray or grease with oil.  Pour about 1/3 cup batter onto one side of the iron waffle and close it.

5.  Bake until the iron's indicator light shows that cooking is done and the waffles are golden brown and crisp.  It's best to serve them immediately with butter, maple syrup or honey and fruits...

LIME TART...












LIME TART

Chocolate Crust Pastry :

125  gm  butter
60  gm  icing sugar
1  small  egg, about 25 gm, lightly beaten
1/2  tsp  vanilla extract
220  gm  plain flour
20  gm  cocoa powder


Lime Filling :

2  eggs  (65 gm each with shell - grade B)
70  ml  Dairy whipping cream
90  ml  fresh milk
70  ml  lime juice@limau nipis
90  gm  caster sugar
1  tsp  lime zest
1-2  drops  green food colouring


Directions :

1.  Chocolate Pastry :  Beat butter and icing sugar until fluffy then gradually add in vanilla extract and beaten egg, mix well.

2.  Sift plain flour and cocoa powder together and pour into butter mixture and mix well to form into a soft chocolate dough.

3.  Divide chocolate dough into 4 portions and place them into 4 pieces, 5 inch/12 cm round tart pans (line bottom with parchment paper). 

4.  Press dough evenly into tart pan.  Then prick holes on dough (base) and bake in preheated oven at 180'C for 15 minutes.  Remove and set aside.

5.  Lime Filling :  Combine all the lime filling ingredients together, gently mix well and pass through a sieve/strainer.  Then pour lime liquid mixture evenly into tart pans.

6.  Bake in preheated oven at 180'C for 15 minutes to just set.  Leave lime tarts to cool and serve or chill for 2 to 3 hours before serving.  Decorate as desired if you wish...
