AYAM MASAK LEMAK CILI API...







AYAM MASAK LEMAK CILI API

Bahan-Bahan :

1/2  ekor  ayam yang siap dicuci bersih & ditoskan
12  biji  cili padi  -  ditumbuk lumat
1  inci  kunyit hidup  -  ditumbuk lumat bersama cili padi
1  batang  serai  -  dititik
1  keping  asam gelugur  (jika suka)
1  helai  daun kunyit  -  dihiris
1  kotak  santan KARA atau santan segar anggaran 1 paket  (200 ml)
1  cawan  air
Garam secukup rasa


Cara Memasak :

1.  Panaskan kuali dengan api paling kecil.  Masukkan ayam (tidak perlu letak minyak).  Tujuannya nak bagi air ayam keluar agar nanti kuah lemak tidak terasa hanyir ayam.

2.  Masukkan sekali cili api dan kunyit hidup yang telah ditumbuk lumat serta serai ke dalam kuali dan digaul bersama ayam.  Gaul dan panaskan sekejap saja.  Kemudian angkat ayam bersama cili dan serai tadi.  Ketepikan seketika.

3.  Kemudian panaskan santan sahaja di dalam periuk.  Panaskan dengan api kecil sehingga santan mendidih.

4.  Kemudian masukkan kembali ayam yang telah digaul bersama cili api, kunyit dan serai tadi ke dalam santan di atas api kecil.  Masukkan sedikit air ikut kesesuaian.  Kacau-kacau jangan bagi santan pecah minyak.  Masukkan asam gelugur (jika guna).  Masukkan garam secukup rasa dan akhir sekali masukkan hirisan daun kunyit.  Biarkan mendidih seketika, tutup api dan sedia dihidangkan...

AMAZING APPLE BREAD...










DEBBIE'S AMAZING APPLE BREAD

Ingredients :

2  cups  all-purpose flour
2  eggs   (I use grade A)
2  cups  white sugar  (next time should reduced because too sweet)
1/2  cup  vegetable oil
2  tsp  vanilla extract
2  cups  apples ; peeled & diced
1 1/2  tsp  salt
1  tsp  baking powder
1/2  tsp  ground cinnamon or more to taste


Directions :

1.  Preheat oven to 350'F/175'C.  Grease and lined a loaf pan.  Set aside.

2.  Beat eggs, sugar, vegetable oil and vanilla extract in a mixing bowl; then add apples.  (I use hand whisk).

3.  Mix flour, salt, baking powder and ground cinnamon in a separate bowl; add to apple mixture and stir just until evenly combined into a thick batter.  Pour batter into the prepared loaf pan.

4.  Bake in the preheated oven for about 45 minutes.  Then cover loaf pan with aluminium foil; and continue baking until a toothpick inserted into the center comes out clean, about 15 minutes more.

INFO :  This Apple Bread is moist and delicious but too sweet to my taste. Next time should reduced the sugar if I were to make them again...

APPLE CAKE...










APPLE CAKE
adapted from :    Joy of Baking;  (delicious & moist)...




Ingredients :

3/4  cup  chopped walnuts or pecans  (75 gm)
454  gm  apples  (about 3 large Granny Smith -  1 pound)
1-2  tbsp  freshly squeezed lemon juice
1 1/2  cup  all-purpose flour  (195 gm)
3/4  cup  granulated white sugar  (150 gm)
1 1/2  tsp  baking powder
1  tsp  ground cinnamon
1/4  tsp  salt
85  gm  unsalted butter ; melted and cooled to room temperature  (6 tbsp)
2  large  eggs
1/2  tsp  pure vanilla extract
2  tbsp  fresh milk
1/3  cup  raisins  (50 gm)


Glaze :  (optional)

1/3  cup  apricot preserves or jam


Directions :

1.  Preheat oven to 350'F/180'C.  Butter or spray an 8-inch/20cm square baking pan and line with parchment paper.  Set aside.

2.  Place the nuts on a baking tray and bake for about 8 to 10 minutes or until lightly brown and fragrant.  Remove from oven, cool and then coarsely chopped.

3.  Peel, core and chop apples into bite-sized pieces.  Toss with 1-2 tablespoons of lemon juice.

4.  In a bowl, combine the flour, sugar, baking powder, ground cinnamon and salt.  Add the melted butter, eggs, vanilla extract and milk and beat until fully incorporated.  Fold in the chopped nuts, raisins and chopped apples.

5.  Transfer the batter into the prepared pan, smooth the top and bake for about 30-45 minutes or until done.  Remove from oven and let cool.

6.  While the cake is still warm, prepare the glaze.  Place apricot jam or preserves in a small saucepan and warm over medium heat until liquid.  Remove from heat and strain through a fine strainer to remove any fruit lumps.  Brush/spread the warmed preserves over the apple cake.

7.  Serve warm with whipped cream or vanilla ice cream...

CHOCOLATE ORANGE FUDGE CAKE...








CHOCOLATE ORANGE FUDGE CAKE

Ingredients :

125  gm  butter, chopped coarsely
250  gm  dark chocolate, chopped coarsely
100  gm  self-raising flour
150  gm  caster sugar  (used 100 gm)
3  eggs  (used grade A)
Zest from one orange
60  ml  orange juice  (1/4 cup)
2  tbsp  contreu liqueur  (optional) (used orange flavour, 1 tsp)


Chocolate Orange Ganache :

200  gm  dark chocolate, chopped coarsely
Zest from one orange
160  ml  Dairy Whipping Cream (I used one small packed 200 ml, after boiling then measure)


Directions :

1.  Preheat oven to 180'C.  Grease 20cm (8 inches) round/square cake pan; line base with baking paper.  Set aside.

2.  Stir butter and chocolate in medium saucepan over low heat until melted and smooth.  Transfer mixture to a large bowl.  Cool 10 minutes.

3.  Add sifted flour, sugar, eggs, zest, juice and Liqueur to chocolate mixture; beat at low speed with electric mixer until ingredients are combined.  Increased speed to medium; beat about 2 minutes or until mixture is smooth.

4.  Pour mixture into prepared pan; bake for about 55-60 minutes until cooked through.  Stand cake in pan 5 minutes; turn, top-side up, onto wire rack to cool completely.

5.  Meanwhile, make chocolate orange ganache.  Spread cake with 2-3 layers of ganache.

Chocolate Orange Ganache :    Combine chocolate and zest in medium bowl.  Bring cream to the boil in small saucepan at medium heat.  Add hot cream to chocolate mixture; let stand for 5 minutes then stir until smooth.  Allow to stand 15 minutes or until ganache is spreadable...
