Ingredients :

2  eggs  (I use large eggs)
1  egg  yolk
145  gm  soft light brown sugar
2  tsp.  vanilla essence
1/2  tsp.  salt
145  gm  unsalted butter
175  gm  dark chocolate,  chopped
1  tbsp.  cocoa powder
4  tbsp.  plain flour
130  gm  Oreos  (1 packet),  crumbled

Instructions :

1.  Preheat oven to 180'C/160'C fan-forced.  Melt butter and dark chocolate in the microwave.

2.  In a mixing bowl, add in eggs, egg yolk, brown sugar, vanilla essence and salt.  Whisk on high for about 5 minutes until pale and double in volume.

3.  Sift in cocoa powder and plain flour.  Add in melted butter and chocolate mixture.  Fold in gently.

4.  Fold in 1/2 of the crumble Oreos.

5.  Transfer into a 7 inch x 7 inch square pan lined with parchment paper.  Drop/tap the pan lightly to release the air bubbles.  Sprinkle the rest of the crumbled Oreos.

6.  Bake it in the oven for about 45-55 minutes until done.  (depending on your oven temperature).

7.  Let it cool completely in the pan before transferring.  Cut the brownies into small squares, transfer it into the platter and dust with icing sugar.
