ZUCCHINI BROWNIES

ZUCCHINI BROWNIES

Ingredients :


   1/2  cup    vegetable oil
1 1/2  cups   white sugar 
      2  tsp      vanilla extract
      2  cups    all-purpose flour
   1/2  cup      unsweetened cocoa powder
1 1/2  tsp       baking soda
      1  tsp       salt
      2  cups    shredded zucchini
   1/2  cup      toasted chopped walnuts


Frosting :

     6  tbsp    unsweetened cocoa powder
  1/4  cup     margarine
     2  cups   icing sugar
  1/4  cup    fresh milk
  1/2  tsp     vanilla extract


Method :

1.   Preheat oven to 175'C.  Grease and flour a 9 x 13 inch baking pan.  Set aside.

2.   In a large bowl, mix together the oil, sugar and vanilla extract until well blended.  Meanwhile, combine the flour, cocoa powder, baking soda and salt; stir into the sugar mixture.  Fold in the shredded zucchini and walnuts.  Spread evenly into the prepared pans.  (Don't worry if the batter is a bit dry, it's ok).

3.   Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched.

4.   To make the frosting :  melt together the 6 tablespoons of cocoa powder and margarine; set aside to cool slightly.  In a medium bowl, blend together the icing sugar, milk and vanilla extract.  Then stir in the cocoa mixture.  Spread over cooled brownies before cutting into squares. (using hand whisk or spatula).

NOTE :  This brownies is moist & delicious but too sweet for me.  The frosting too is also sweet.  This is a reminder for me.  Next time when I want to make it again, I had to reduced the sugar in this recipe.
