CRUNCHY CHEESE CAKE











CRUNCHY CHEESE CAKE
cookbook :  Baking Made Easy - Agnes Chang
tried & tested :  zaralovebaking; moist & delicious...




Ingredients :

250  gm  butter
100  gm  icing sugar  -  sifted
    5  egg  whites gred 'B'
135  gm  castor sugar
    5  egg  yolks
200  gm  self-raising flour, mixed with
  35  gm  corn flour,  sifted 2 times
100  gm  grated Cheddar cheese


Topping :

  60  gm  Cheddar cheese - grated


Method :

1.  Cream butter and icing sugar until light and fluffy.
2.  Whisk egg whites and castor sugar until stiff.  Add egg yolks and beat well.
3.  Mix in butter mixture (of no. 1) and fold in flour and grated Cheddar cheese.  Stir until just combined.
4.  Pour into a lined and greased 22 cm baking tin.  Grate Cheddar cheese to cover the top.
5.  Bake in a pre-heated oven at 180'C for about 30-40 minutes until cooked and golden brown.

NOTE :  The baked cheese cake has a layer of crunchy cheese on top.  The saltish taste of the cheese enhances the flavour of the whole cake and makes it very delicious!
