CRANBERRY MUFFINS ...










CRANBERRY MUFFINS 
(NO BAKING SODA ADDED)

makes :    7-10 muffins




Ingredient A :

190  gm  self-raising flour
1/4  tsp.  salt
100  gm  sugar


Ingredient B :

1  egg  (I use large egg)
100  gm  milk
80  gm  cooking oil
1  tsp.  vanilla extract


50  gm  dried cranberries  (I used dried mix fruits)
Optional :    1 teaspoon Strawberry Jam filling in each muffins


Method :

1.  Preheat oven to 180'C.

2.  Mix (A) in a bowl.  Mix (B) in another bowl.

3.  Pour (B) into (A), mix well with a spoon.  DO NOT OVER MIX the batter.

4.  Add in dried cranberries, mix well.

5.  Pour the batter evenly into 7-10 muffin cups.  If using strawberry jam filling; scoop 1 tablespoon batter into a muffin cup, add 1 teaspoon strawberry jam and top up with the batter until 3/4 full.
Note :  Reduce sugar to 90 gm if using strawberry jam filling.

6.  Bake in a preheated oven for 25 minutes or until golden brown.  Serve warm.
