PEANUT BUTTER CUPCAKES (makes : 30 cupcakes paperliner No. 8)

Ingredients :

65 gm unsalted butter
1/2 cup smooth peanut butter
125 gm brown sugar
2 eggs
150 gm all purpose flour
1 tsp. baking powder
120 ml milk
1 tsp. vanilla extract

Method :

1. Preheat oven to 170'C.
2. Line cupcake tray with paper cup liners.
3. Sift togther flour and baking powder.
4. Cream butter, sugar and peanut butter with electric mixer for 2-3 minutes.
5. Beat in the eggs, one at a time.
6. Add vanilla and mix well.
7. Alternately add flour and milk in two batches to creamed butter mixture.
8. Fill each paper cup two-thirds (2/3) full.
9. Bake for 15 to 18 minutes or when skewer inserted in centre of cupcake comes out clean.
10. Decorate as desired. (I decorate mine with Peanut Butter Frosting).

Peanut Butter Frosting :

70 gm unsalted butter
1/2 cup creamy peanut butter
150 gm icing sugar - sifted
2 tbsp. milk

Method :

Beat butter and peanut butter until soft. Add sugar and beat on low speed until combined. Add milk and beat until smooth.
