Cheesecake

 FEATHERLIGHT CHEESECAKE



FEATHERLIGHT CHEESECAKE  (8 inch - square)

Ingredients :

250  ml   milk
 20  gm   butter
125  gm  cream cheese  (room temperature)

 50  gm   all-purpose flour
   3  nos  egg yolks
   1  tsp   vanilla extract
   3  nos   egg whites
1/8  tsp    cream of tartar
 80  gm    granulated sugar
Pinch of salt
1/2  tbsp  cocoa powder
   1  tbsp  boiling water

Method :

1.   Line the base of a 8 inch square pan, greased and line with parchment paper.  Set aside.
2.   Preheat oven to 150'C/160'C.
3.   In a medium bowl, beat cream cheese until smooth.
4.   Bring milk and butter to a boil (double boil) and pour 1/4 of it into cream cheese and gently stir  until incorporated.  Pour in another 1/4 of the milk and stir again.  Lastly pour in all the milk and stir until smooth.
5.   Let the cream cheese mixture cool down and put in flour.  Mix until smooth.  Then put in egg yolks and vanilla extract.  Mix until smooth.
6.   In another clean bowl, beat egg whites until frothy.  Put in salt and cream of tartar and beat until soft peaks.  Put in the sugar and beat until stiff peaks.
7.   Put 1/3 of egg whites into cream cheese mixture in 3 batches and fold gently with spatula.
8.   Mix cocoa powder with boiling water until smooth.  Put in a few tablespoons of cream cheese batter and mix until smooth chocolatey batter is formed.
9.   Pour main cream cheese batter into prepared pan.  Drizzle chocolate batter over main cream cheese batter.  Use a knife and cut through the batter to create marbling effect.
10. Bake for 50-60 minutes using water-bath technic.  (Put the pan in another big baking pan and pour hot boiling water half-way through).
11. Leave to cool before cutting.
