Sandwich cake

Ingredients :

250  gm   unsalted butter, room temperature
250  gm   granulated sugar
250  gm   self-raising flour
250  gm   eggs  (crack 4 egg and weigh), room temperature
1      tsp   vanilla extract
1/4   tsp   salt
2     tbsp  fresh milk, room temperature

Filling & Decoration :

6   tbsp   fruit filling or jam
1   box    strawberry  -  slice & mix with 1 tbsp sugar, set aside for 15 minutes
8   tbsp   double cream  -  whipped till it has soft medium peak (250 ml + 2 tbsp icing sugar)
Icing sugar to sprinkle on top of the cake  (mine I use simple buttercream for decoration)

Tray :  2  8-inch round pan

Method :

     Preheat oven to 160'C.  Lined and greased 2 8 inch round pan and set aside.  Meanwhile mix flour and salt together.  Set aside.  Beat butter and sugar until light and fluffy.  Add eggs one at a time.  Beat until incorporated.  Add in vanilla extract.  Mix until combined.  Add in flour and fold gently with spatula.  Add enough milk to get a smooth dropping consistency.
     Pour into 2 prepared 8-inch round pan and smoth it with spatula.  Bake for about 30 minutes.  Let it cool completely and decorate as desired.
