Dry Ingredients :

140  gm  cake flour
1  tsp  baking powder
55  gm  brown sugar
55  gm  granulated sugar

Wet Ingredients :

2  eggs  (I use large eggs)
100  gm  plain yogurt  (room temperature)
60  gm  melted butter

Coffee + Chocolate Paste :

2  tsp  hot water
1  tsp  instant coffee granules
1  tsp  cocoa powder

Enough Oreo cookies  ~  break into pieces  (I cut into 4)

Method :

1.  Preheat oven to 190'C.  Line muffin tins with 10 baking papercup.  Set aside.

2.  Mix all the dry ingredients together.

3.  Make coffee + chocolate paste :   Mix hot water, instant coffee granules and cocoa powder together.

4.  Put all the wet ingredients and coffee + chocolate paste in a jug.  Whisk to combine.

5.  Pour into the dry ingredients bowl.  Fold to combine.

6.  Spoon into the prepared cups (about 1/3).  Press the Oreo cookie (break into small pieces) into the batter and cover with a muffin batter.

7.  Place the Oreo pieces on top (or use Mini Oreo).  Bake for 23-25 minutes until cooked.
