Strawberry & Pandan Chifon Cake






STRAWBERRY & PANDAN CHIFFON CAKE  (9 inch tube pan)

Ingredient A :  

3/4  cup   sugar
6    large  egg whites
1/2 tsp     cream of tartar

Ingredient B :

1 3/4  cup   cake flour
1/2     cup   sugar
2        tsp    baking powder
1/4     tsp    salt
6     large    egg yolks
1       cup    milk
1/4    cup    vegetable oil
1/2    tsp     pandan paste
1/2    tsp     strawberry emulco
A few drops of pink colouring

Method :

1.   Preheat oven to 350'F.  Get ready a 9 inch tube pan.  Do not grease the pan.  In a bowl, sieve the flour, baking powder and salt together.  Set aside.
2.   In another bowl, mix egg yolks and sugar until light and creamy.  Add in vegetable oil and milk.  Mix well.  Fold in flour mixture and mix well.  Divide this mixture into 2 portion.
3.   One portion mix in strawberry emulco and a few drop of pink colouring, while the other portion mix in pandan paste.  Mix well.
4.   Whisk Ingredients A until light and stiff.  Divide the egg white mixture equally into 2.  Fold one portion gently into the strawberry batter and the other half to the pandan batter.  Mix gently.
5.   Pour half of the strawberry batter into the tube pan, spread evenly and pour half of pandan batter, follow by strawberry and again the pandan batter.
6.   Bake for 40-45 minutes.  Remove from oven, invert the baking pan immediately.  Leave to cool completely before serving.
