Classic Whoopie

CLASSIC CHOCOLATE WHOOPIE PIES

Ingredients :

1 2/3   cups   all-purpose flour
   2/3   cups   cocoa powder
1 1/2   tsp      baking soda
   1/2   tsp      salt
      4   tbsp    unsalted butter
      4   tbsp    shortening
      1   cup     packed brown sugar
      1   egg
      1   tsp      vanilla essence
      1   cup     fresh milk


Method :

1.   Preheat oven to 375'F  (190'C).
2.   Line baking sheets with parchment paper.
3.   Sift together the flour, cocoa powder, baking soda and salt.  Set aside.
4.   Beat butter, shortening and sugar until just combined.
5.   Add egg and vanilla essence and beat for two (2) more minutes.
6.   Add half of flour mixture and half of the milk until incorporated.  Repeat with remaining flour and milk and beat until combined.
7.   Using a tablespoon, drop batter on baking sheets 2 inches apart.
8.   Bake for about 10 minutes or until pies spring back when pressed gently.
9.   Let cool and sandwiched with any filling of your choice.


Salty Peanut Butter Filling :

3/4   cup   creamy peanut butter  (or crunchy)
3/4   cup   butter
3/4   cup   icing sugar - sifted
1/2   tsp    salt

Method :

1.   Beat peanut butter and butter until creamy.
2.   Add sugar and salt and beat until light and fluffy.
3.   Spread filling on flat side of one cooled cake.  Top with second cake and press gently.


OR :

Vanilla Filling :  (from 'JoyofBaking.com')

  1/4   cup   shortening  (55 gm)
  1/4   cup   butter  (55 gm)
     1   cup   icing sugar - sifted
1 1/2  tsp    vanilla essence
  1/2   cup   light corn syrup

Method :

    Beat shortening and butter until creamy.  Add sugar and beat until light and creamy.  Beat in vanilla and slowly drizzle in corn syrup.  Continue to beat until the filling looks like soft mayonnaise.
