Ingredients :

1 1/2   cups   all-purpose flour
   1/2   cup     cocoa powder
1 1/4   cup     caster sugar
   3/4   tsp      baking soda
   1/2   tsp      baking powder
   1/2   tsp      salt
      2   eggs
   1/2   cup     vegetable oil
      1   tsp      vanilla essence
   3/4   cup     fresh milk
   3/4   cup     hot water
    24   pcs.    Oreos, plus more for crumbs

Frosting :

1      cup   shortening
1      lb.     powdered sugar/icing sugar - sifted
1      tsp    vanilla essence
3-6   tbsp   milk
Oreo cookie crums (2 or more - crushed)

Method :

1.   For the cupcakes :  preheat oven to 350'F.  Line tray with baking/papercups.
2.   Place one whole cookie in each cup, set aside.
3.   Mix the flour, cocoa powder, sugar, baking soda, baking powder and salt in a large mixing bowl.
4.   Add the eggs, oil, vanilla essence and milk and mix well until combined.
5.   Add the hot water and mix until combined.  (batter will be liquidy)
6.   Pour batter into each baking cup 3/4 full.
7.   Bake for 16 - 18 minutes.

For the frosting :   beat shortening until smooth.  Add vanilla essence and mix until combined.  Add powdered sugar in three additions.  Add a tablespoon of milk at a time until you achieve the desired consistency.  Add the cookie crumbs and mix until well combined.  Place in a piping bag with a 1M tip and swirl on top of each cupcakes.  Deco as desired.
