CRANBERRY RAISIN YOGURT MUFFINS








CRANBERRY RAISIN YOGURT MUFFINS

Ingredients :

      1  cup  plain yogurt
      1  large  egg - lightly beaten
   1/4  cup  olive oil
   1/2  tsp  pure vanilla extract
      2  cups  all-purpose flour
   1/2  cup  raw sugar
      1  tsp  baking powder
   1/2  tsp  baking soda
   1/4  tsp  salt
      1  cup  dried cranberries
   1/4  cup  raisins


Method :

1.  Preheat oven to 375'F/190'C.  Line muffin tray with paper liners.  Set aside.

2.  With an electric/hand mixer, whisk together yogurt, egg, oil and vanilla extract in a bowl for 2 minutes.

3.  In another bowl, sift flour, sugar, baking powder, baking soda and salt.  Take 1 teaspoon of dry ingredients, mix and toss with the cranberries and raisins.

4.  With a rubber spatula, fold wet ingredients into dry ingredients and stir only until ingredients are well combined.  Gently stir in the cranberries and raisins.  (Do not over mix the batter or tough muffins will result).

5.  Evenly fill liners with batter 2 spoons, until 2/3 full.  Bake for 15-20 minutes until cooked.
