NIGELLA CHOCOLATE CHOCOLATE CHIP MUFFINS








NIGELLA CHOCOLATE CHOCOLATE CHIP MUFFN

Ingredients :

1 3/4  cup  all-purpose flour
      2  tsp  baking powder
   1/2  tsp  baking soda
      2  tbsp  cocoa powder
   3/4  cup  superfine sugar
   3/4  cup  Hershey chocolate chips, plus 1/4 cup extra for sprinkling
      1  cup  milk
   1/3  cup  plus  2 teaspoon vegetable oil
      1  large  egg
      1  tsp  pure vanilla extract


Special equipment :  Mini muffin tin with paper muffin cases


Method :

1.  Preheat the oven to 400'F/200'C.

2.  Put the flour, baking powder, baking soda, cocoa powder, sugar and 3/4 cup of the chocolate chips into a large bowl.  Mix all the dry ingredients evenly, set aside.

3.  In another bowl, put in milk, vegetable oil, egg and vanilla extract.  Whisk all wet ingredients together until well combined.

4.  Slowly pour the wet ingredients into the dry ingredients, mix to combine, spoon into the prepared muffin cases.  Sprinkle the remaining 1/4 cup chocolate chip on top and then bake for about 20 minutes or until the muffins are dark, rises and springy to the touch.
