Cupcake again!

 with chocolate frosting

Ingredients :

1/2   cup   cocoa powder  (50 gm)
1      cup   boiling water  (240 ml)
1 1/3 cup  all purpose flour  (175 gm)
2      tsp    baking powder
1/2   tsp    salt
1/2   cup   unsalted butter  (113 gm)
1      cup   caster sugar  (200 gm)
2    large   eggs
2      tsp    vanilla extract

Chocolate Fudge Frosting :

4   oz        cooking chocolate  (120 gm - chopped)
2/3 cup     unsalted butter  (150 gm)
1 1/3 cup  icing sugar  (sifted -  160 gm)
1 1/2 tsp   vanilla extract

Method :

     Mix together cocoa powder and boiling water until there's no lump.  Let cool and set aside.  Meanwhile whisk together flour, baking powder and salt.  Set aside.  Beat butter and sugar until light and fluffy.  Add in egg one at a time until smooth.  Beat in vanilla.  Add flour mixture until incorporated.  Add cooled cocoa mixture and stir until smooth.  Fill 2/3 into cupcake liner and bake at a temperature of 190'C for 20 minutes.

Frosting :  Melt chocolate (double-boil) and let cool at room temperature.  Beat butter until smooth and creamy (about 1 minute).  Add icing sugar, beat until light and fluffy (about 2 minutes).  Beat in vanilla.  Add cooled chocolate and beat until smooth and glossy (about 2-3 minutes).  Ready to use.
