Ingredients :

250  gm  plain flour
110  gm  plain chocolate, grated
2  tsp  baking powder
1  tsp  bicarbonate of soda
1/2  tsp  salt
90  gm  butter or margarine, softened
150  gm  caster sugar
2  eggs  (I use grade A)
1  tbsp  orange zest
60  ml  orange juice
110  ml  buttermilk

Directions :

1.  Preheat oven to 200'C.  Lightly grease a 12 cup muffin tin or line with paper cases.

2.  In a medium bowl, mix flour, plain chocolate, baking powder, bicarbonate of soda and salt.

3.  In a separate medium bowl, cream together butter or margarine and sugar until smooth.  Beat in the eggs one at a time then stir in the orange zest, orange juice and buttermilk.  Pour into the flour mixture, and mix just until evenly moist.  Spoon mixture into prepared muffin tin.

4.  Bake for 15 to 20 minutes in the preheated oven or until a skewer inserted into the center of a muffin comes out clean.  Let muffins cool in the tin on a wire rack for at least 10 minutes before removing from the tin...
