Ingredients :

125  gm  butter,  melted
90  gm  caster sugar
1  large  egg
1  tsp  vanilla extract
3  red apples Granny Smith Apples
50  gm  walnuts,  chopped
115  gm  cake flour or plain flour
1/2  tsp  baking powder
1/2  tsp  baking soda
1  tsp  ground cinnamon powder

Directions :

1.  Preheat oven to 170'C.  Line a 8 inch square baking tin all sides up.  Sift cake flour, baking powder, baking soda and cinnamon powder into a bowl for later use.

2.  Peel apples, cored and chopped to pieces.

3.  In a large bowl, combine melted butter, sugar, egg and vanilla extract together with a hand whisk.

4.  Drop in chopped apples and walnuts and fold with a rubber spatula.  Fold in the flour mixture into the wet mixture until just blended.

5.  Spread evenly into the prepared lined cake tin.  Bake for about 30 minutes in the preheated oven, or until a skewer inserted in the center comes out clean.

6.  Leave cake to cool completely, slice and dust with some icing sugar before serving...
