Mocha Cupcakes

Ingredients :

100  gm     unsalted butter
1 1/2 tbsp  instant coffee
120  ml      warm water
150  gm     soft brown sugar
2      nos    eggs
2      tsp     vanilla extract
110  gm     all-purpose flour
20    gm     cocoa powder
1/2   tsp     baking powder
1/4   tsp     baking soda
1/4   tsp     salt

Method :

1.     Preheat oven at 170'C.
2.     Line cupcake tray with paper cup liners.
3.     Combine coffee and warm water, mix well.
4.     Sift together flour, cocoa powder, baking powder, baking soda and salt.
5.     Cream butter and sugar with electric mixer for 2-3 minutes.
6.     Add eggs one at a time, beat well.  Add vanilla.
7.     Alternately add flour and coffee in two batches to creamed butter mixture.
8.     Mix well but do not overbeat.
9.     Fill each paper cup 2/3 full.
10.   Bake for 18-20 minutes or when skewer inserted in centre of cupcake comes out clean.
11.   You may decorate as desired.
