EASY PEASY CHOCOLATE CHIP MUFFIN






EASY PEASY CHOCOLATE CHIP MUFFIN

tried by  :   zaralovebaking... (moist, crispy on top & delicious)



Ingredients :

250  gm  plain flour
100  gm  caster sugar
    3  tsp  baking powder
 1/2  tsp  salt
175  ml  fresh milk
  75  ml  vegetable oil
    1  egg, grade 'A'
125  gm  dark chocolate chips (I use butterscoth chips)
    3  tbsp  caster sugar
    2  tbsp  dark brown soft sugar


Method :

1.  Preheat the oven to 200'C.  Line the muffin tin with paper cases.  Set aside.

2.  In a bowl, combine flour, 100 gm sugar, baking powder, chocolate chips and salt; mix well.

3.  In another bowl, combine milk, oil and egg; blend well.  Add the dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy - do not overmix).

4.  Fill paper cases 2/3 full.  Sprinkle tops of muffins before baking with a combination of 3 tablespoons sugar and 2 tablespoons dark brown soft sugar.

5.  Bake for 20 to 25 minutes or until skewer inserted in the centre comes out clean.  Cool on a wire rack.
