MOIST BANANA NUT BREAD








MOIST BANANA NUT BREAD

Ingredients :

      3  medium  ripe bananas
      3  cups  all-purpose flour
      1  tsp  baking soda
   3/4  tsp  salt
      3  large  eggs  (I use gred 'A')
      2  cups  granulated sugar
1 1/2  cups  vegetable oil
   1/2  cup  sour cream  (I use plain yogurt)
      2  tbsp  vanilla extract

Topping :  

1 1/2  tbsp  white sugar *
      2  tsp  cinnamon powder * (* mix together)


Method :

1.  Preheat the oven to 350'F.
2.  Grease and lined two 9"x5" loaf pans.  Set aside.
3.  Peel and mash the bananas.
4.  In a bowl; mix the flour, baking soda and salt.
5.  In another bowl, beat the oil, eggs and sugar until smooth.
6.  Add the flour mixture and beat until mixed.
7.  Add the bananas, sour cream and vanilla extract and mix only until it is all well blended together.  DO NOT OVER BEAT!!
8.  Equally divide the batter into the pans.  Sprinkle with ground cinnamon and granulated sugar.
9.  Bake for 60 minutes or until a toothpick incerted in the center comes out clean.

Note  :   If you like walnuts, add 1/2 cup of chopped walnuts.
