SOUR CREAM COFFEE CAKE









SOUR CREAM COFFEE CAKE

Ingredients :

   1/2  cup  softened, unsalted butter  (113 gm)
      1  cup  sugar
      2  eggs, room temperature
      2  cups  sifted flour
      1  tsp  baking soda
      1  tsp  baking powder
   1/2  tsp  salt
1 1/2  cups  sour cream  (I use plain yogurt)
      1  tsp  vanilla extract
   1/2  cup  dark brown sugar
      1  tsp  ground cinnamon
      1  cup  chopped nuts  (walnuts, hazelnuts or macadamia nuts)


Method :

     Heat on oven to 350'F and prepare an 11-inch round cake pan with butter and flour.
     Mix the sifted flour, baking soda, baking powder and salt in a bowl.
     In a small bowl, mix together the brown sugar, ground cinnamon and nuts.
     Cream the butter with the sugar.  Add the eggs, one at a time and beat until uniform.  Add half of the flour and mix in.  Add half of the sour cream and mix in.  Add the remaining flour and mix in.  Finally, add the remaining sour cream and mix in.
     Place half of the cake batter into the pan and spread it out.  Tap the pan on the counter.  Spread half of the nuts and sugar mixture on the batter.  Add the remaining batter and spread it out.  Tap the pan again and add the remaining nuts and sugar mixture.
     Bake the cake for 30 to 35 minutes or until done.  Cool down completely.
