ZUCCHINI-CHOCOLATE CHIP MUFFINS...








ZUCCHINI-CHOCOLATE CHIP MUFFINS

yields :    1 dozen



Ingredients :

1 1/2  cups  all-purpose flour
3/4  cup  caster sugar
1  tsp  baking soda
1  tsp  ground cinnamon
1/2  tsp  salt
1  large  egg  ~  lightly beaten
1/2  cup  canola oil  (I use corn oil)
1/4  cup  milk
1  tbsp  lemon juice
1  tsp  vanilla extract
1  cup  shredded zucchini
1/4  cup  miniature semisweet chocolate chips
1/4  cup  chopped walnuts


Directions :

1.  Preheat oven to 350'F/180'C.  Line muffin pan with paper liners.  Set aside.

2.  In a bowl, combine flour, sugar, baking soda, ground cinnamon and salt.  In a measuring jug, beat the egg, oil, milk, lemon juice and vanilla extract; stir into dry ingredients just until moistened.  Fold in zucchini, chocolate chips and walnuts.  Fill greased or paper-lined muffin cups 2/3 full.

3.  Bake at 350'F/180'C for about 20-25 minutes or until a toothpick inserted comes out clean.
