Ingredients :

185     gm   unsalted butter
 3/4     cup  caster sugar
    3     eggs, lightly beaten
    1     tsp    vanilla essence
1 1/2   cups   self-raising flour
   1/2   cup     plain flour
   1/4   cup     milk
icing sugar for decoration
fresh blueberries for decoration

Tray :  20 cm (8") round cake pan

Method :

1.   Preheat oven to 180'C.  Brush cake pan with melted butter and line base with baking paper.

2.   Beat butter and sugar until light and creamy.

3.   Add eggs gradually, beating mixture until combined.  Add vanilla, beat just until combined.

4.   Fold in sifted flours alternately with milk.  Stir until ingredients are just combined and the mixture is almost smooth.

5.   Spoon mixture into prepared cake pan, smooth surface.  Spread few fresh blueberries on top.  Bake for 45 minutes or until skewer comes out clean when inserted in centre of cake.

6.   Leave in cake pan 10 minutes before turning onto wire rack to cool.  Dust cake with sifted icing sugar.
