RED VELVET WAFFLES

RED VELVET WAFFLES  (serves 4)

      2  cups   all-purpose flour
1 1/4  cups   white sugar
   1/4  tsp      salt
      1  tsp      baking soda
      4  tsp      unsweetened cocoa powder
   1/4  cup     unsalted butter, melted & cooled
      2  cups   buttermilk
      2  large   eggs 'A'
      1  tsp      vanilla essence
      2  tbsp    red food colouring



1.   Preheat waffle iron.  Spray with non-stick cooking spray.
2.   Separate eggs.  Beat egg whites until stiff.
3.   Mix dry ingredients together then add in wet ingredients.
4.   Mix all ingredients together just until combined then fold in egg whites just until incorporated.
5.   Pour into waffle iron and cook until done.
