Ingredients :

150  gm  salted butter  OR  110 gm ghee + 1/3 tsp salt + 40 gm salted butter
90  gm  icing sugar  ~  sifted
150  gm  plain flour
112  gm  semolina flour
1/3  tsp  baking soda@soda bicarbonate
1/2  tsp  vanilla essence

Directions :

Cream butter and icing sugar till light and fluffy.
Add in both flours, baking soda and vanilla essence, and mix to a soft pliable dough.
If your dough is dry, add some butter.  Roll into 8 gm balls.  (I use 1/2 tbsp measurement).
Using a floral plunger, cut/stamp 2mm into the centre of each ball.
Reshape the cookie and place them an inch apart on lined baking tray.
Bake in a preheated oven at 150'C for about 25-27 minutes until cooked...
