Ingredients :

220  gm  butter,  room temperature
170  gm  caster sugar  (3/4 cup)
3  large  eggs (about 210 gm),  separated
1  tsp.  vanilla extract
180  gm  plain flour or cake flour  (1.5 cup)
30  gm  corn flour/corn starch  (1/4 cup)
1  tsp.  baking powder  (5 gm)
250  gm  green apples,  peeled and cubed and mix with 1 1/2 tablespoon lemon juice (about 2 cups)
Lemon zest from 1 large lemon

Instructions :

1.  Spray Non-stick spray evenly in 9-inch Bundt pan or lined two Loaf Pans and set aside.

2.  Cream butter and sugar till light and fluffy and pale then add in vanilla extract, mix well.

3.  Add egg yolks into the batter one at a time and mix well before adding in another then slowly add in egg whites and mix well, then stop the machine.

4.  Sift plain flour, corn flour and baking powder together and fold into butter mixture with a rubber spatula.

5.  Lastly pour in lemon zest and apple cubes, mix well.

6.  Pour the batter into the prepared pan and place in the preheated oven at 180'C and bake for about 35-40 minutes or skewer inserted in the cake comes out clean.

7.  Leave pound cake to cool in the pan for 30 minutes and unmould cake then place onto wire rack to cool completely.  Chill the cake for about 30 minutes before cutting and serve...
