Ingredients :  (makes one loaf)

       2  cups  zucchini  -  peeled & grated  (300 gm)
1 1/4  cup  all-purpose flour  (160 gm)
   1/2  cup  unsweetened cocoa powder  (60 gm)
      1  tsp  baking soda
  1/2  tsp  salt
  1/2  tsp  instant coffee
      1  tsp  vanilla extract
  1/2  cup  sugar  (100 gm)
  1/4  cup  oil  (60 ml)
  1/4  cup  yogurt  (60 gm)
      2  eggs  (I use grade A)
  100  gm  Dark Chocolate  -  chopped

Topping :

40  gm  Dark Chocolate  -  chopped

Method :

1.  Preheat oven to 350'F/180'C.  Grease and line a 9 x 5 inch (23x13 cm) loaf pan with parchment paper.

2.  Place the grated zucchini in a sieve to remove excess moisture until you prepare the rest of the ingredients.

3.  In a bowl whisk together flour, cocoa powder, baking soda, instant coffee and salt.  Set aside until ready to use.

4.  In another bowl whisk eggs with sugar until well combined.  Stir in vanilla extract, yogurt and oil.  Add flour mixture and stir until well combined.  Add grated zucchini and chopped chocolate.

5.  Pour the batter into the prepared pan and top with the rest of chopped chocolate (40 gm).

6.  Bake for about 45 to 60 minutes or until a toothpick inserted into the center comes out clean.

7.  Cool completely before serving...
