CHOCOLATE POUND CAKE...








 can be serve with ice cream of your choice...






CHOCOLATE POUND CAKE

Ingredients :

       1  cup + 2  tbsp  butter  (250 gm)
1 1/2  cup  sugar  (300 gm)
    1/3  cup  cocoa powder  (40 gm)
   200  ml   milk 
     40  gm  semisweet chocolate 
       4  eggs  grade A
1 2/3  cups  all-purpose flour  (200 gm)
   1/4  tsp  salt
2 1/2  tsp  baking powder  (10 gm)
Nuts of your choice, for topping


Method :

1.  Preheat oven to 350'F/180'C.  Grease and line with parchment paper  2@two  9x5 inch/23x13 cm loaf pans.  Set aside.

2.  Place butter in a saucepan and melt over low heat.  Add sugar, cocoa powder and milk and stir to combine.  Bring to a boil for 1 minute.  Remove from heat.

3.  To make the chocolate glaze for the top :  place the chocolate pieces into a small bowl and add about 1 cup (220 gm) of the hot cocoa syrup.  Stir to melt the chocolate and set aside until ready to use.

4.  While the cocoa syrup cools down slightly, separate the egg whites from yolks and whip the egg whites until foamy and stiff peaks form.

5.  Add egg yolks, flour, salt and baking powder to the cocoa syrup and stir to combine.  Gently fold the whipped egg whites into the mixture (in 2-3 batches) and divide the mixture evenly into the two prepared pans.

6.  Bake for about 30-35 minutes or until done.  Pour the reserved chocolate glaze on the top and decorate with nuts if desired.  (I top with mini chocolate chips).

7.  Let cool completely before serving...
