PANCAKE RECIPE...










PANCAKE RECIPE

Ingredients :

      1  cup  all-purpose flour  (130 gm)
1 1/2  tsp  baking powder
1/4  tsp  salt
2  tbsp  granulated white sugar  (28 gm)
1  large  egg ;  lightly beaten
1  cup  milk  (240 ml)
2  tbsp  unsalted butter ; melted  (28 gm)
Plus estra melted butter for greasing the pan


Method :

1.  In a large bowl whisk together the flour, baking powder, salt and sugar.  In a separate bowl whisk together the egg, milk and melted butter.  Make a well in the center of the dry ingredients and then pour in the egg mixture, all at once and stir (with a rubber spatula or wooden spoon) just until combined.  The batter should have some small lumps.  (Do not over mix or you will have a tough pancake).

2.  Heat a non-stick pan, lightly brushed the pan with melted butter and using a 1/4 cup (60 ml) measuring cup, pour pancake batter onto the hot pan.  When the bottom of the pancakes are brown and bubbles start to appear on the top surfaces, turn over.  Continue to cook until lightly browned.

3.  Repeat with the remaining batter until done.  Serve immediately with butter and maple syrup.


  For Blueberries :  Sprinkle some fresh or frozen blueberries on tops of the pancake just as bubbles start to appear on the top surface, turn over.  Continue to cook for a few minutes.  Remove and serve immediately with butter and maple syrup...
