IN A JAR

1 1/2 tsp gelatin powder
30 gm sugar
60 gm water
1 ripened mango (about 180 gm)
130 gm evaporated milk (can replace with coconut milk)
1. Add sugar and gelatin powder to the water and let it sit for about 8-10 minutes to allow the gelatin to bloom. Then warm up the gelatin mixture over low heat until all dissolved. Set aside.
2. Put the mango flesh, evaporated milk and gelatin mixture into a blender or food processor and give it a good blitz until the mango is pureed and all the ingredients are well blended.
3. Scoop into the jars or containers and place in the refrigerator to set for at least 3 hours. Serve chilled!!!
