BROWNIES

Ingredients :

150  gm    bittersweet or semisweet chocolate, chopped  (5  oz.)
1/2   cup   unsalted butter  (113 gm/1 stick)
   2   cup   cocoa powder  (15  gm)
   1   cup   granulated white sugar  (200 gm)
   1   tsp    vanilla essence
   3  large  eggs
3/4   cup   all-purpose flour  (95 gm)
1/4   tsp    salt
3/4   cup   chocolate chip  (125 gm, optional)

Tray :  8 inch square baking pan


Method :

     Preheat oven to 350'F (180'C).  Butter or spray an 8 inch (20cm) square baking pan and line the bottom of pan with parchment paper.
     Melt the chocolate and butter over a double boiler.  Remove from heat and whisk in cocoa powder and sugar.  Next, whisk in vanilla essence and eggs, one at a time.  Finally, stir in flour, salt and chocolate chip (if using).  Stir until just combined.  Pour brownies into prepared baking pan, smoothing the top with spatula.
     Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out with a little batter and a few moist clumps clinging to it.  (The brownies can be frozen).
