Meringue Cookies



adapted from  :
tested by me  (delicious, chooey & gooey like marshmallows aka pavlova)

Ingredients :

   2   egg   whites
1/8   tsp    salt
1/8   tsp    cream of tartar
   1   tsp    vanilla essence
3/4   cup   granulated white sugar
   6   oz.    chocolate chip/chocolate rice  (optional)

Method :

1.   Beat egg whites, salt, cream of tartar and vanilla essence until soft peaks form.
2.   Add sugar gradually, beating well until sugar is dissolved and meringue peaks are stiff.
3.   Fold in chocolate chips and food colouring (if using).
4.   Line cookie sheets with parchment paper.
5.   Drop mixture by spoonful onto parchment, leaving a space of   1  inch  between cookies.
6.   Place in preheated 400'F oven, immediately reduce oven temperature to 275'F.
7.   Bake for 10 minutes, then turn oven off.
8.   Leave cookies in oven (to dry) without opening door for several hours or until oven is cool.

Note :  300'F  (150'C)
