CHOCOLATE CHIP MUFFINS

Ingredients :
1/2 cup unsalted butter, melted and cooled (113 gm)
2 large eggs
2/3 cup milk (180 ml)
1 1/2 tsp vanilla essence
2 cups all-purpose flour (260 gm)
2/3 cup granulated white sugar (135 gm)
2 1/2 tsp baking powder
1/4 tsp salt
1 cup chocolate chips (240 gm)
Cinnamon Sugar Topping :
1 tbsp white sugar
1/2 tsp ground cinnamon
Method :
Preheat oven to 375'F (190'C).
In a bowl, whisk the eggs, milk and vanilla essence.
In another bowl, whisk the flour, sugar, baking powder and salt. Stir in the chocolate chips. With a spatula fold the wet ingredients, along with the melted butter, into the dry ingredients and stir only until the ingredients are moistened and combined. (Do not over mix or you will have tough muffins).
Evenly fill the muffin cups. In a small bowl, combine the topping ingredients and then sprinkle a little topping on each muffin.
Bake for about 18-20 minutes.
