Strawberry Muffins

Ingredients :

1/4     cup   canola oil
1/2     cup   fresh milk
   1     egg
1/2      tsp    salt
   2      tsp    baking powder
1/2      cup   white caster sugar
1 3/4   cup   all-purpose flour
   1      cup   fresh strawberries,  chopped

Method :

1.   Preheat oven to 375'F  (190'C), gris muffin cup tin or use paper liners.  Set aside.
2.   In a small bowl, combine oil, milk and egg and whisk until just combined.
3.   In a large bowl, mix together flour, salt, baking powder and sugar.  Toss in chopped strawberries and stir to coat with flour.  Pour in milk mixture and stir together.  Do not over mix or the muffins will be tough.
4.   Fill muffin cups 2/3 full.  Bake for 25 minutes.  Cool 10 minutes and remove from pan.

Yields :  about   14 pcs.
