EASY APPLE CINNAMON MUFFINS
EASY APPLE CINNAMON MUFFINS (serves 12 muffins)
adapted from : allrecipes.com/Mindy ; (moist & super delicious)....
Ingredients :
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 tsp salt
2 tsp baking powder
1 tsp ground cinnamon
1/3 cup vegetable oil
1 egg, grade 'A'
1/3 cup fresh milk
2 apples - peeled, cored & chopped (I use Granny Smith apples)
1/2 cup white sugar
1/3 cup all-purpose flour
1/2 cup cold butter, cubed (113 gm)
1 1/2 tsp ground cinnamon
Method :
1. Preheat oven to 400'F/200'C. Grease six muffin cups or line with paper muffin liners.
2. In a large bowl, stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 tsp ground cinnamon. Mix in oil, egg and milk. Fold in chopped apples. Mix lightly with spatula just until combined. (Do not over mix or you'll get a tough muffin). Spoon batter into prepared muffin cups, filling to the top of the cup.
3. In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 tsp cinnamon. Mix together with a fork and sprinkle over unbaked muffins. (Next time I should make half of it as it's quite a lot).
4. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.
