PANDAN BUTTER CAKE









PANDAN BUTTER CAKE

Ingredients :

250  gm  butter
200  gm  white sugar
    4  eggs  (I use grade B)
250  gm  plain flour
    5  gm  baking powder  (1 tsp)
100  ml   fresh milk
  50  gm  poppy seeds (or chocolate rice, chocolate chip)
 1/4  tsp  pandan essence
Few drops of apple green food colouring


Method :

1.  Preheat oven to 170'C, greased and line a 7-inch baking pan (or 2 loaf foil pans), set aside.

2.  Beat butter and sugar until creamy.

3.  Add in eggs, one at a time, beating well after each addition.  Add in pandan essence and a few drops of apple green food coloring and stir until fully incorporated.

4.  Fold in sifted flour and baking powder.

5.  Stir in milk, mix to form batter. 

6.  Add a teaspoon of flour into the chocolate rice and stir to coat.  Pour the chocolate rice into the batter and fold to mix until fully incorporated.

7.  Pour the batter into the prepared pans.  Sprinkle some chocolate chips and chopped almonds (if desired).  Bake in oven for about 40-45 minutes or until cooked.
