MOLTEN CHOC-CHUNK BROWNIES
adapted from : Donna Hay@ AFC...
Ingredients :
1 cup plain/all-purpose flour (150 gm)
3/4 cup cocoa powder (75 gm)
3/4 cup brown sugar (130 gm)
1 1/3 cups caster/superfine sugar (290 gm)
175 gm unsalted butter ~ melted & cooled
1 tsp vanilla extract
3 eggs (I use grade A)
125 gm dark chocolate ~ chopped
Method :
1. Place the flour, cocoa powder, both the sugars, the melted butter, vanilla extract and eggs in a large bowl and mix until smooth. Add the chopped chocolate and stir to combine.
2. Preheat oven to 160'C/325'F. Lightly greased a 20 cm/8 inch square tin and lined with non-stick baking paper.
3. Spread the mixture into the tin. (I sprinkle some chocolate chips, this is optional).
4. Bake for 50 minutes to 1 hour or until the brownie is set.
5. Allow to cool in the tin for 5 minutes before slicing into squares and serve warm or allow to cool completely in the tin...
NOTES : The brownie is ready when the top feels set to the touch. Brownies will keep in an airtight container for up to 1 week...
