CHOCOLATE CHOCOLATE-CHIP MUFFINS...








NIGELLA LAWSON'S CHOCOLATE CHOCOLATE-
CHIP MUFFINS RECIPE

makes :    25 mini muffins




Ingredients :

1 3/4  cups  all-purpose flour
2  tsp  baking powder
1/2  tsp  baking soda
2  tbsp.  cocoa powder
3/4  cup  superfine sugar
3/4  cup  Hershey chocolate chips plus  1/4 cup for sprinkling
1  cup  fresh milk
1/3  cup  plus  2  teaspoons  vegetable oil
1  egg  (I used grade A)
1  tsp  pure vanilla extract


Instructions :

1.  Special equipment :   Mini muffin tin with paper muffin cases.

2.  Preheat the oven to 400'F/200'C.

3.  Put the flour, baking powder, baking soda, cocoa powder, sugar and 3/4 cup of the chocolate chips into a large bowl.  Mix all the dry ingredients evenly, put aside.

4.  Get another bowl, put in milk, vegetable oil, egg and vanilla extract.  Whisking all wet ingredients together.

5.  Slowly pour the wet ingredients into dry ingredients, mix to combine, spoon into the prepared muffin cases.  Sprinkle the remaining 1/4 cup chocolate chip on top and then bake for 20 minutes or until the muffins are dark, risen and springy to the touch.
