Almond Cupcakes






ALMOND CUPCAKES

Ingredients :

125  gm   unsalted butter
125  gm   caster sugar
  40  gm   ground almond
125  gm   all purpose flour
 1/2  tsp   baking powder
 1/2  tsp   baking soda
    3  tbsp milk
    2  eggs


Method :

1.   Preheat oven to 170'C.
2.   Line cupcake tray with papercup liners.
3.   Sift together flour, baking powder and baking soda.
4.   Mix all ingredients and beat with electric mixer on low speed until combined.
5.   Increase speed to medium and beat until mixture looks smooth.
6.   Fill each papercup two-thirds full.  Top with almond nib if you like.
7.   Bake for 18-20 minutes or when skewer inserted in centre of cupcake comes out clean.

Yields :  16 pcs, papercup #9 (5 cm in diameter)
