APRICOT CUP CAKE

Ingredients :

170  gm   butter
200  gm   caster sugar
 1/4  tsp   salt
    2  eggs
  90  ml    fresh milk
240  gm   plain flour
    2  tsp   baking powder
  60  gm   ground almond
150  gm   dried apricots  (chopped)
100  gm   chocolate chips


Method :

1.   Preheat oven to 180'C.
2.   Melt butter, remove from heat.
3.   Combine sugar, salt, eggs and milk.  Add into melted butter, stir well.
4.   Fold in sifted flour, baking powder and ground almond.  Then add in chopped apricot and chocolate chips to form smooth batter.
5.   Spoon batter into cupcake cases 2/3 full.  Bake in oven for 25 minutes or until cooked.  Leave to cool.
