Ingredients :

3  large  apples  -  cored & peeled
3  tbsp  brown sugar
1  tsp  ground cinnamon

Method :

1.  Chop apples into small cubes, place cubed apples in a medium bowl, add brown sugar and cinnamon and toss everything together to coat chopped apples with brown sugar and cinnamon.  Set aside for 20 minutes.

2.  In the mean time prepare crepes.

3.  Right before serving, heat chopped apples on medium heat in a skillet and warm the crepes in a microwave for about 20 seconds.  To serve, add chopped apples on top of the open crepe, and fold into pocket shape.  Sprinkle with icing sugar and whipped fresh cream before serving, if desired.

Crepes  :

      2  cups  milk
1 1/3  cups  flour
      1  large  egg
      1  tbsp  vegetable oil
   1/2  tsp  baking powder
      2  tbsp  sugar

Method :

     Mix all the ingredients in a large bowl and whisk the mixture until lumps dissolve.  Heat a non-stick pan and greased with a little butter, pour 1/3 cup of batter onto the pan.  Cook until both sides turn slightly golden.  Finish with the rest of the batter.
