Ingredients :

1 1/4  cup  all-purpose flour
      2  tbsp  cocoa powder
   1/2  tsp  baking powder
   1/2  tsp  baking soda
   1/4  tsp  salt
   1/4  cup  butter
   3/4  cup  caster sugar
   3/4  cup  buttermilk
      1  egg, grade A
      1  tsp  vanilla extract
Red food colouring

Method :

1.  Preheat oven to 350'F.

2.  In a bowl mix together the first 5 ingredients and set aside.  Cream together butter and sugar, add the egg and vanilla extract until well combined and creamy.

3.  Add 1/2 dry ingredients and half (1/2) buttermilk alternately until well combined but not over mixing.  Using spatula, add enough red food colouring to get the desired red colour.

4.  Using ice cream scoop, scoop the batter evenly into your prepared pan/cupcake liners and bake for about 18-22 minutes or until done.  Let cupcakes cool completely.

Frosting :

Ingredients :

2  cups  icing sugar, sifted
4  oz.  cream cheese
2  tbsp  butter
1  tbsp  milk
1  tsp  vanilla extract

Method :

     Put all the ingredients in a mixing bowl and mix until well combined and it has the consistency of a thick frosting...
