SELAMAT HARI RAYA AIDILADHA@10 ZULHIJJAH...










PUMPKIN CAKE
adapted from :    cookbook 'Kevin Chai'...




Ingredients :

100  gm  self-raising flour
30  gm  plain flour
20  gm  ground hazelnut
1/4  tsp  bicarbonate of soda
3  eggs  (I use grade B)
150  gm  caster sugar
120  ml  corn oil
1/4  tsp  salt
150  gm  grated pumpkin
30  gm  grated chocolate  (I use chocolate rice)


Method :

1.  Grease and line a 10cm x 20cm (4 x 8 inches) loaf pan.  Preheat oven to 175'C.

2.  Combine flours, ground hazelnut and bicarbonate of soda in a mixing bowl.

3.  Combine eggs, sugar, oil and salt.  Stir into flour mixture together with grated pumpkin and grated chocolate until well blended.

4.  Spoon mixture into the prepared pan.  Bake in oven for 35-40 minutes or until cooked through.  Stand for 10 minutes and turned onto wire rack to cool completely...
